I feel kind of bad because I've made my menu but still haven't gone to the grocery store yet. So I decided that instead of eating the leftover pizza that my roommate ordered yesterday, I would cook! gasp!
I've been meaning to cook some quesadillas for the last 2 weeks and tonight I did. And now you get to enjoy the pictorial fruit of my labors :D
-sauteing bell pepper and mushrooms in a nice sesame oil. after a bit, i added some hoisin sauce because i love that shit so. much.
i had some leftover imitation crab meat, so i tossed that in there too and let it heat through.

put that pan aside and started the actual 'quesa' part :P
-tossed a bit of reduced fat cheddar on the bottom, let it melt a little-

-spread out the saute mixture-

-topped with a couple slices of provolone-

-left that to melt and mixed up some dipping sauce, about a tablespoon each of low-fat sour cream and all natural salsa (i'll spare you the mixed concoction, lol)-

-since there was no way i could get a picture of me flipping this thing, i'll just leave that to your imagination (2 spatulas!)-
-sliced it up!-

-and got it ready to eat (well, i guess you got the mixed sauce anyway-oops)-

just a note, these quesadillas were made on spinach herb tortillas. while they're cooking, they kind of have a funky smell. also, they have kind of a woody flavor (sort of?) after being grilled. it doesn't taste bad, but it's a little different.
(also, don't mind my dirty stove >_> )
enjoy!
